Eating pizza at Keste
Looking around the landscape of the pizza industry, I find the pizza world is very much like the tech world of Sillicon Valley and Sillicon Alley. The new kids on the block in the New York pizza scene are the Neapolitan faction. They're buck the trend of the classic New York slice joint and the most popular ones have come in recent years. Motorino, Co, Paulie Gee, and Keste. These guys are the facebook, twitter, linkedin, and groupons of the food world. They're newer to the scene and injecting excitement and flair to a sector that previously was dominated by the old guard. The new guys char the bottom of their pizzas, they use imported ingredients and they're completely different than a classic slice or the fast food pizzas that charmed my childhood memories.
Take the 'prosciutto cotto' ($15) for example. It's essentially mozzarella pizza with ham. If you get this at Pizza Hut, that's exactly what it would taste like. At Keste though, the sauce is enjoyable, the crust is soft and pliable and they call it prosciutto cotto instead of ham. That's like twitter saying I'm publishing something useful in 140 character instead of just bullshitting.
If you get the 'Keste' ($19), then you upgrade to prosciutto di parma and buffalo mozzarella. Again, redefining ham and cheese is like telling me all of a sudden all these random people are my friends on facebook. It don't matter that we didn't talk in HS and I secretly thought your cracker ass was a racist. Naw, that don't matter, I'm gonna poke you right back motherfucker.
New fangled social networking sites are like new pizzas in New York - they cool and interesting. I enjoy them a lot and they bring some sort of value to my life. I still crave the classic though. Sometimes all you just want is a boring New York slice or a friend that knows you in real life.

I had Pizza Hut just mere hours ago... and I can assure you, my ham pizza did not look like that...
