Bacon hummus and cheese sandwich
Last week I was at Trader Joes and I decided to buy the expensive bacon. It was five dollars for twelve slices? It was one of those, "Our pigs are all natural and very upidty, they only eat the organic defecation from their owners, therefore you know it is good stuff." Perhaps I get carried away with stuff like that sometimes. Is it good bacon? Yes. Is it that much better than cheaper bacon? I am not sure. One difference is that the expensive bacon is more smokey. The other thing is, since it is expensive bacon, I prefer not to eat it with other things. If it is supposed to be superior product, I feel like it should be eaten alone to make sure other flavors do not interfere. With that in mind, I went ahead and put it in a sandwich. (I am just full of contradictions...)
The sandwich is very simple. I purchased some spicy hummus and started to add it to my grilled cheese sandwiches. And then I got this bacon, and it seemed like a good idea to try that too. When you make this, be sure to start by making the bacon because that takes a while if you like your bacon crispy. After you put the bacon on some napkins to soak up the bacon fat, you can butter up some toast and melt the cheese. I like spicy hummus with this sandwich because it helps to kick it up a notch and the crispy bacon gives a nice crunch in the middle.
I do not know about where you live, but here in New York, spring has sprung. The days run longer and odds are it is nice outside on the weekends. Wow, this is a horrible post, but it is Saturday and really nice outside. I am going to stop writing and go outside now.

The sandwich looks delicious! Good to hear that spring has started in New York as in Holland (where I live) it's not really anywhere to be seen!! Raining all day today... Maybe a good idea to start making your sandwich... :)

Thanks! Yea Spring is starting but I want to see it in full motion! Soon we shall get cherry blossoms in NY, then you know spring is really here.
