Lemon bars deep dish style
Ok. So I am not the best cook or baker in the world. I saw the post on Smitten Kitchen about lemon bars and a little voice in my head was all like, "You are good enough, smart enough, and doggone it, people like me." I tried my best to follow the instructions right up until the point where I was supposed to read how big of a baking dish to use. Oooooh nelly. It called for 9x13 and in a moment of genius, I used an 8x8 pan. Hurray! Yea you can basically imagine how that works... instead of a wider pan and shallower lemon bars, you end up with like a deep dish lemon bar. If lemon bars had a New York vs. Chicago thing, I woulda been the Chicago one. This just serves as a life lesson, read carefully before diving into something new; at least this was just a botched dessert.
Actually the process of making these lemon bars was not that tough. I would probably try it again sometime in the future when I learn how to read. Apparently my in-born abacus does not cover roman numerals. Doh. The thing is, the filling still tastes okay since I baked it until it firmed up. When I looked at it after the time stated on the recipe, the filling was still watery, therefore I baked it until it looked alright. It tastes ok, not great. You know me though, it all tastes good to me.
And I will close out this post by saying that Rockband is the best invention ever. Yea, I know some people are all like, "Yo why not just play real instruments?" Answer? Because video games are fun. The end. If you have never heard of the game, basically it lets you have a singer, guitarist, bassist, and a drummer. When you play this game, you get totally immersed into it with your friends; your hunger abates and time melts away like an ice cube in Tahiti. Anyway, one of the songs on there is Say it ain't so by Weezer. That is pretty much what I said when I found out about the dimensions of the pan I was supposed to use for the lemon bars. Le sigh. Tomorrow I shall talk about a BBQ place in Brooklyn, and of course, more about Rockband.

Could have fooled me! Even though you used the wrong pan, looks amazing in your pictures.
Been recently reading up a lot of food blogs and I must say yours is one of the best; great reviews and yummy pictures!
Rockband sounds fun but not fun if you got no one that wants to play with it with ya, though Gutiar Hero is fun (if that is any alike) =)

My favorite part of this story is when the timer went off and you were so confused as to why the center of the 8x8 pan was still jiggly.

Lemon bar is one of my favor desert. I once made a tray almost every other week in a winter for my son's piano teacher when she came over to conduct the lesson. Of course, I had a share to eat some bars. Soon after the winter, I had gain 10lb. I then realize "gaining weight is easy, losing weight is another story". This is probably the reason that there are couple of diet food providers on the TV.

Yea if I made lemon bars every week then weight would be an issue too... but I eat so much of everything else that it balances out.

It was the picture that attracted me to this entry. It looks so delicious.
Congrats on being a good cook - improvise as situations arise. That is a sign a good cook!
Lemon bar is one of my favorites, particularly the kind that uses real butter. Umm ... Now I know who can make it :) ...
