Al Forno Mashed Potatoes
Do you guys remember that commercial way back then, where Rachael Leigh Cook takes a frying pan and sticks it to the helpless egg and goes, "This is your brain, this is your brain on heroin." No? That is okay, because that is the reason they invented youtube. These days everyone is afraid of obesity. They need a commercial where it is like, "This is your body. This is your body on obesity. Mushy."
Speaking of mashed potatoes, I used to think that they just put copious amounts of butter into boiled potatoes in order to make mashed potatoes. Last month when I saw the Al Forno mashed potatoes recipe, and it called for heavy cream. Brilliant! You can follow the recipe exactly but after adding all the heavy cream, it really did not need a whole stick of butter. It is completely up to you though. Just remember to salt liberally and you have good tasting potatoes.
Back to the obesity idea... It really does beg the question, why not just scare the kids with obesity they way they used to scare us about drug use? I do no know what is wrong with either or really. Listen, if I want to do lines of coke on my 450lb belly with 10 crack whores, that just means we are having a good time. They just never teach you how to let loose in elementary school. Recess? Tetherball? Come on! What kids need to see is sumo wrestlers doing a Shakira-like belly dance. Sear that idea into the deep crevices of their memories. Dooooo it! Wow, I need better blog posts.

Nice take on obesity.
But on mashed potatoes, I think its important to point out the type of potato you used. I looks like a yukon gold (which happens to be my favorite type of potato). I like it especially for mashing because I think it has great flavor and medium wax vs starch.

Try this - put julienne potatoes in water for a while and just simply stir fry with chopped green onion, salt, black pepper. It's delicious without butter or heavy cream

I do believe it was yukon gold. I just bought the bag that was on sale though. The week prior I tried this with red potatoes and really, it tastes good too.
